Edge grain countertops come standard with a 'sealed and oiled' finish. This finish permeates the countertop and does not leave a hard seal on the top, allowing the wood to be used for direct food prep. Edge grain countertops and butcher blocks will need to be re-oiled periodically to maintain the moisture of the top and to prevent cracking and checking due to dryness.
